I LOVE scones. It wasn’t always like that. Right before i went vegan i was trying to be healthier. I was cutting back on carbs. I remember going to the grocery store and seeing Brown Sugar Scones and i was like well when in Rome. And by me cutting out carbs i mean i would eat junk carbs.
When i decided to go vegan back in 2013 i needed to find scones that were vegan. During that time vegan “junk” food isn’t what it is today or what it was even 5 years ago. During that time i had no such luck in finding a scone recipe that was vegan. I gave up. Also i gave up on being vegan for personal reasons.
Let’s fast forward. During the time from 2013 to today i’ve developed some food allergies and sensitivities. So i thought eating scones was never going to happen again. And partly i was being lazy because i thought making scones that are vegan and gluten free were going to taste nasty, gross and stale.
Today i learned how to bake accordingly to my needs. My needs are Gluten Free, Dairy free, Egg Free and Soy free just to name a few. The other day i made some blueberry scones premade mix from the brand Bella Gluten Free. If you don’t know Bella Gluten Free is an All Allergen Friendly,Gluten Free and Non-GMO certified. I got mine from wegmans earlier this year. Did i mention the shelf like is long. I got mine at the begining of this year and i just used it.
I got mine from wegmans for i think either $4.99 or $5.99 it is pricey considering the closest wegmans is in Pa. and i have to pay tax. So i don’t get it often. Bella Gluten Free offers a lot more product but i’m just talking about the scones today. I’ll leave the link to Bella Gluten Free at the bottom of this post. I made the blueberry scone mix the other day and lets just say the scones were gone within hours not days hours.
I went to bed wanting some good Ole’ Brown Sugar Scones. When i woke up yesterday morning i went into the kitchen and whipped up some scones. Okay scones are a quick and easy thing to make if you happen to have everything on hand. I have a baking cabinet and i BOOM i had everything.
So now onto the Recipe
Here is what you will need
1 3/4 cup Gluten free all purpose flour blend I use Bob Red Mill
1 1/4 teaspoon xanthan gum (Use only if your Gluten Free Flour Blend doesn’t have it)
1/4 cup Brown Sugar (Or more to taste)
1/4 Cup Cane Sugar
1 tablespoon baking powder
Pinch Salt
1/4 cup Vegan Butter (Room Temp)
1 cup Blueberries (You can use Frozen but Fresh will work best)
1 cup Dairy Free heavy whipping cream or Coconut milk. (Full Fat coconut milk will work best. But i never have it on hand.)
Directions.
Whisk together the flour sugar, baking powder and salt together in a large mixing bowl and combine.
Add the vegan butter to the flour and use a pastry blender or a fork to mix into the flour. Mix until the butter is well combined. Add the sugars to your mixture and should be powdery & dry it should look like sand.
Add the liquid you chose to the bowl and fold the dough until a soft dough forms. But it should still look kinda dry and not sticky.
Put some flour onto the work space you are using and with your rolling pin
Roll the dough into a round disk about 7 inches wide and 1 1/2 -2 inches tall. Cut the dough into 6 wedges.
Preheat the oven to 400 lightly pull the wedges apart leaving space between each wedge (at least 2 inches) on a baking sheet. This is an optional step. You can sprinkle some organic cane sugar on the top of the scone before you put them in the oven or right when they come out of the oven. If you do it when they come out of the oven some of the cane sugar will melt into the scones. Bake for 20-22 minutes until the scones have risen and are golden in color. Check the scones after 12 minutes to make sure they aren’t too dark in color.
If your scones are a little darker in color you can turn the heat down to 350.
Once your scones are done transfer to a wire rack to cool.
The scones will last a few days in an air tight container.
