I’m back with another recipe and this recipe is happening in the same day as i posted the lazy sushi recipe. That sushi recipe is designed for lazy people who love sushi but might not have a lot of time to spend making sushi and for sushi lovers who like to take a short cut from time to time.
A few days ago i made what was suppose to be a pancake bar recipe. And the concept was that the batter is the texture of pancake but when baked it’s more like a bar and combined you are suppose to get a pancake bar. In my case mine turned out to be more of a cake than a bar. It’s okay because it ended up being really delicious.
I’ll be honest most of my baking recipes rarely turn out the first time around. I have had some recent fails but most of the time i get baking success. Who doesn’t want to eat cake for breakfast? With this recipe you can make it the day before. All you have to do put it into a plastic container or if you aren’t into plastic than a glass mason jar. And the next day all you have to do is stir it up.
When i bake i want the house to smell delicious. I want the sweet aroma go through the house and if you didn’t want it now you do. I’m going to give you the recipe i used. Now like with most recipes i made it my own catered to my own needs i.e my food allergies and sensitivities. And like all recipes i post. You can always change things up according to your needs or someone else’s needs depending if you’re making this for someone else with food allergies.
This recipe a blueberry pancake cake recipe. When i made it i didn’t have blueberries on hand i only had chocolate chips. I’m giving you the recipe according to how i changed it. And at the end i will link some of the products i used so if you want to try these products for yourself you can. this recipe calls for flax eggs. I do not ever use flax eggs because i usually only have chia seeds on hand so i make chia seed eggs instead. I actually don’t mind having chia seeds in my bake goods. You can see the chia seeds but trust me you can’t taste them. If you happen to have flax seed/meal go ahead and use it. If you only have chia seeds or you just want to try something new go ahead with your bad self and use chia seeds.Now onto the recipe
I just want to make a quick mention that the ingredients i used are all organic expect for the flour and i think the milk. If you don’t have these products in organic that is fine. Your pancake cake will still turn out delicious. I’m just one of these people when i bake something that is vegan+gf and organic i have to tell anybody who eats the bake good because i am that proud and sometimes that person that will be like yea you said you don’t like vegan things or gf or organic so in your face sir. Sorry for the rant back to the recipe.
Disclaimer: I don’t really measure the chia seeds because i’m at the point in vegan and gf baking that i know what measurements to use without actually measuring. So i’ll say this 1 Tbsp of chia seeds +2.5 Tbsp of water will = 1 chia egg. I add 3.5 Tbsp of water because i like my chia seeds a little soft. Also i don’t let my chia seeds sit for 15 minutes. I only let them sit for the time it takes me to get the other ingredients ready so maybe 10 minutes tops. I did a little research and as long as you let them sit for 5-10 minutes it will be A Ok.
You’ll need some ingredients:
2 1/2 cups of gluten free flour (i used Bobs Red Mill so i can’t tell you if anyother GF flours will work)
3 Tbsp of baking powder
3 Tsp of cinnamon (or to taste)
1/2 cup of organic cane sugar ( or white sugar)
1/2 cup of brown rice syrup ( or agave nectar or maple syrup)
2 Tbsp of chia seeds + 3.5 Tbsp water ( I eyeballed it. If your chia seeds seem a little dry add 1 Tbsp of water.)
1 cup of plant based milk (i used macadamia milk.. It’s all i had on hand any plant based milk will do)
1/3 cup of melted coconut oil. (you can use vegetable oil if you don’t have coconut oil)
1 cup chocolate chips ( or blueberries)
Side Note WARNING: I don’t know what size pan i used. I grabbed one that looked like it could hold the batter. Mine ended up working out. So proceed with caution if you don’t know what size pan to use.
Directions:
Preheat oven to 350 degrees. First you want to make your chia seed egg. combine your chia seeds + 3.5 Tbsp of water set aside for 5-10 minutes. In a large bowl add all the ingredients expect the chia seeds and chocolate chips. Once the chia seeds are all soaked up add the “egg” to your batter and with an electric mixer or by hand mix the batter for 5 minutes. Once mixed the batter should smell and taste like a cinnamon bun.
Bake at 350 degrees for 20-25 minutes. At the 20 minute mark take your cake out of the oven and stick a toothpick in the center of the cake if the toothpick comes out clean than your cake is done. If it doesn’t come out clean put your cake back in the oven for another 5 minutes.
Once your cake is out of the oven. Add your chocolate chips to the cake as soon as it comes out of the oven. If you like chocolate chips in your batter you can add them to your batter i just like mine sprinkled on top of the cake. Also as soon as the pancake cake came out of the oven i sprinkled some cane sugar on top. Some of the sugar melted and it gave the cake a little more sweet flavor. Because i used brown rice syrup my cake wasn’t as sweet. In the ingredient list i gave you alternitives to the ingredients i used.
