Food Sensitivities Part 2

I had a moment and I completely deleted part 2. I was finished and everything and I was just going over some final touches. Now I have to try to remember everything I wrote. Well here's to trying.

When December rolled around I had a feeling that it was more than being sick. When the new year rolled around I always felt bloated and started having problems in the #2 area. When I talked to people about it some said you need more veggies or you need to drink more water. I already ate veggies and drank water and I still had problems.

My problems are good Sensitivities/Intolerance

Let me tell you what the difference is between the two

Food Allergy:  An allergy happens when the immune system, your body's defense against germs, has a reaction to a particular food. It can be mild, like an itchy feeling or hives. Sometimes you get severe symptoms -- called anaphylaxis -- like trouble breathing, a swollen tongue, or dizziness.

Sensitivities/Intolerance: Food intolerance means your body is missing an enzyme you need to digest some type of food. If you're lactose intolerant, for instance, you don't have enough lactase, an enzyme that lets you digest dairy products. If you're gluten intolerant, you can't process gluten, which is found in some grains including wheat, barley, and rye.

For me I have Intolerances/Sensitivities.  I always had a gut feeling that Gluten was a culprit but never really had a proper diagnosis. January I started researching Food sensitivities test. Insurance doesn't cover them and Doctors don't test for Intolerance/Sensitivities they only test for allergies and the only thing I'm allergic to is Shellfish.

So I began my research. I found a few that had great reviews and those came with a great expense. I continued my search and found one called Pinner Test. They had great reviews and weren't uber expensive. I looked up everything about them and I decided I was going to take the plunge.

I finally decided in the beginning of February that I was going to purchase the Pinner Test. It took about 4 days to get to me. It came on a Thursday and when I got home I took it the same day and mailed it off the same day. I wasn't going to wait to take it. I wanted to know what I couldn't eat anymore.

When you receive your test it will come in an envelope with everything you need. It comes with a finger pricker (wrong name for it I know). It also comes with a little pamphlet taking about food sensitivities, a bandaid, a little packet to put your blood droplets and an envelope to return your blood sample.

Once I mailed my sample out I got an email the following Wednesday saying that they received my blood sample and that they sent it off to the lab and that it will take between 7-14 days.  I became nervous. I also became very curious to what the test would say. I thought it would say it would say a lot of things, a few things or nothing at all.

I woke up to an email says my results were in. I thought that was quick it was only 2 days. They don't count weekends or holidays. So 2 days to me was really quick. I would add the pictures of my results but I no longer have them because I accidentally deleted deleted them.

Gluten, Spelt, Barley, Soy, Egg White/Yolk,Sole (Fish), Lentils, Broccoli, Sweet Potatoes, Avocado, Kiwi, Chicken, Beef, Celery and Corn.

They were rated high on the Sensitivity/Intolerance level +2 +3. I can't remember what ranked what. Now here came the fun part. Going through all of my food to see what I can or can't have. Let me tell you I was left with NOTHING! I went  grocery shopping I had a melt down. It was my first time going food shopping with my food sensitivities.

I will talk about going Grocery shopping in Part 3.
